Abstract:
In this paper, Perilla oil microcapsule was prepared by using method of single coagulation, the preparation process was optimized, and the stability was also investigated. Gelatin was used as the wall material, Perilla oil was used as core material, and the embedding rate as an indicator. Based on the single factor test, Box-Behnken central composite-orthogonal design and response surface method, second-degree polynomials equation was estabilished. Finally, optimal technological condition was obtained. The conditions were core-wall ratio 1.5∶1, condensed time 63.9 min, single-coagulation temperature 39.1 ℃, pH 3.6. The obtained microcapsule product had uniform size and good thermal. The embedding rate could reach 90.1% in theory. their room temperature and heating stability were higher than that of uncoated perillatin.
